Stone-ground heirloom masa shaped by tradition — honoring the hands and land that came before us.
Our Story

Born from
Shadow.

Maíz has always been more than just food to us. It carries stories of families, traditions, hard work, and the land it comes from.

Sombra Molino started with a simple intention: to honor that tradition, make masa the with care, and have high quality masa be accessible to those who care about what they put in a plate. We work directly with farmers and cooperatives in Tlaxcala, Oaxaca, Campeche, and Yucatán who have been growing and protecting native corn for generations. Their care and knowledge are at the center of everything we do.

We bring that corn to Austin and prepare it through nixtamalization — the traditional process that's been used for centuries. No shortcuts, no masa harina, no unnecessary additives. Just pure 100% heirloom corn, water, high purity cal, time, and lots care.

The result is masa with real flavor, texture, and connection to where it came from.

Sombra Molino is rooted in the Rio Grande Valley, inspired by the heartland of Mexico, and made by hand in Austin, Texas.

100% native strains of maíz. Non-GMO. No Preservatives. Gluten-free. No colors added.

Made with intention, and meant to be shared from our kitchens to yours.
